Out of 12,772 products sent in from over 100 different countries, Beechwood Fine Foods, located in Frogmore Street, Tring was awarded a 1-star Great Taste award for both Poachers Pickle and Dark and Chunky Marmalade, which means judges considered both as delivering fantastic flavour. More particularly the judges commented of Poachers Pickle, ‘Nicely spiced. Lovely texture. We like the lingering warmth’ and of the marmalade, ‘A rich and indulgent look to this firm set marmalade. Soft peel with bitter sweet molasses citrus contrasts, depth and complexity. An appealing marmalade’.

This is a really easy recipe and converts well to gluten free. Just substitute the regular flour with a gluten free alternative and add xanthum gum (optional) with just as good results. I use a plain gluten free flour with 2½ tsp baking powder and omit the extra baking powder in the recipe. It’s dairy free too!
