Banana and Date Cake – with honey and walnuts

Can be made ahead and frozen. Cuts into 12 to 16 slices.

 

 

 

 

Ingredients

250g softened butter
280g self-raising flour
1½ tsp ground cinnamon
150g light muscovado sugar
3 large eggs, beaten
75g clear honey (plus extra for glazing)
3 ripe bananas (about 500g with skins on)
150g chopped stoned dates
75g chopped walnuts

23cm spring-form cake tin greased and lined

Oven 160C/140C fan/gas 3

How to make it

  • Put the flour, cinnamon, butter, sugar, eggs and honey in a large mixing bowl and beat with an electric mixer until light and fluffy.
  • Mash the bananas and stir into the cake mix with most of the walnuts. Spoon into the prepared tin and smooth the top. Sprinkle over the remaining walnuts.
  • Bake for approx 1hr until firm to the touch and a skewer inserted into the centre comes out clean. Reduce the heat and cook a little longer if required.
  • Whilst still warm brush the top of the cake with the extra honey. Allow to cool completely in the tin on a wire rack.
